In this class you will learn different tricks and techniques to achieve beautiful flowers that can be executed in either buttercream or Royal icing. Roses, daisies, hibiscus, hydrangeas, and more! Our main focus will be the traditional Buttercream Rose.

In this class I will go over every ingredient and explain it major role with in the recipe. I will show you exactly how to mix and incorporate each ingredient and what consistency the batter needs to be just before piping!

Each student will have the opportunity to pipe a few cookies as well will receive 24 shells to fill and take home to enjoy! (yes that's 1 dozen cookies!) As well as a recipe packet!

Cream Tart Letter Cake


Age 12 and up
Skill level: All skill sets welcomed!

Learn how to make this beautiful cream tart letter cake adorned with macaroons, berries, flowers and glitter! Each student will create from beginning to end their own personalized cream tart cake with the letter of their choosing. You will learn how to create your own letter template to use when cutting your cake into the letter you choose. You will also learn the do's and don'ts when adding fresh flowers to a cake. How to properly prep fresh fruit to last longer on your cakes. Each student will receive a packet filled with recipes, tips and tricks to take home as well. This class is going to be packed with color and fun!

Ever wondered what certain piping tips can do? Or do you need to brush up on your piping bag skills? In this class Rachel will go over all the basics from different icings, how to properly fill your pastry bag all way to piping borders, writing and even fancy scroll work. No matter if you use buttercream on cakes or Royal Icing on cookies this class is for everyone.

All work will be executed on practice boards that are provided in class.

This is a crash course on cake decorating!! This class is for the students who have never touched a spatula or the student who would like to brush up on their skills. Learn how to tort and level cake layers. Fill layers properly. Crumb coating and icing a cake perfectly smooth with American Buttercream. You will also decorate your perfect canvas with simple yet beautiful buttercream borders, roses and writing.

Tiered Cakes 101
Skill Set: must have general knowledge of basic cake decorating (simple piping, applying buttercream to a single tiered cake)
Students 12 years and older welcomed
Student Fee: $225 (payment plan offered, just purchase deposit ticket of $50 and follow instructions)
All supplies included.

This class will be FULLY LOADED!!!

This is for the person who has done cakes for a while and wants to sharpen their skills. You will learn everything from planning the design and serving size to the appropriate recipes for the size cake you have chosen. You will learn about structural supports and how to transport cakes in any size. For those that want to profit off their love of baking and cake decorating you will also learn about pricing and the cottage food laws in Louisiana along with an intro into food safety.
Along with these topics of discussion and a few demos, each student will design their own 2-tiered cake (following a list of parameters) break it down to serving sizes, price it and then execute it in real cake. We will stack it and decorate it (limited to fondant, gum paste, lace accents)

Please bring a apron.

Ever wondered how cake artists get those perfect flush stripes around a cake? Or how to use chocolate for the ever so trendy drip look? Or maybe you just want to see how sparkly gold edible accents are made? Were you curious about delicate buttercream flowers? You will learn all that and more!
Each Student will construct their own full size 8"(Diameter)x 6" (Height) vanilla buttercream cake from start to finish. Will serve roughly 12-16 generous slices
