Each student will execute and take home 1 corsett, 2 shoes and 2 lips and 2 masks

You will learn the basics of lining, flooding your cookies. Do's and Dont's when preparing and handling your cookies. Tips and tricks to storing icing. You will learn about different consistencies and the proper one for certain techniques. You will learn how to achieve beautiful designs with layering techniques and fine detail piping. Rachel will show you how to achieve a beautiful aesthetic color scheme and design that utilize unique shapes but mesh together well.

This class is packed with valuable tips, tricks and techniques! Each student will receive a class packet filled with recipes and so much more!

You will learn the basics of lining, flooding your cookies. Do's and Dont's when preparing and handling your cookies. Tips and tricks to storing icing. You will learn about different consistencies and the proper one for certain techniques. You will learn how to achieve beautiful designs with layering techniques and painting with gold. Rachel will show you how to achieve beautiful flowers, bows and ribbons using fondant and how to utilize an air brush gun.

Tiered Cakes 101
Skill Set: must have general knowledge of basic cake decorating (simple piping, applying buttercream to a single tiered cake)
Students 12 years and older welcomed
Student Fee: $225 (payment plan offered, just purchase deposit ticket of $50 and follow instructions)

This class will be FULLY LOADED!!!

This is for the person who has done cakes for a while and wants to sharpen their skills. You will learn everything from planning the design and serving size to the appropriate recipes for the size cake you have chosen. You will learn about structural supports and how to transport cakes in any size. For those that want to profit off their love of baking and cake decorating you will also learn about pricing and the cottage food laws in Louisiana along with an intro into food safety.
Along with these topics of discussion and a few demos, each student will design their own 2-tiered cake (following a list of parameters) break it down to serving sizes, price it and then execute it in real cake. We will stack it and decorate it (limited to fondant, gum paste, lace accents)

Please bring a apron.

In this class Rachel will go over all the basics from different icings, how to properly fill your pastry bag all way to piping borders, writing and even fancy scroll work. No matter if you use buttercream on cakes or Royal Icing on cookies this class is for everyone.

This is a crash course on cake decorating!! This class is for the students who have never touched a spatula or the student who would like to brush up on their skills. Each student will execute this entire Unicorn themed cake from start to finish. This is a 4 layer cake covered in ganache then layers of fondant and adorned in colorful decorations all completely edible. On top sits the sweetest little unicorn with messy hair. Flowers and a free standing rainbow complete this very bright whimsical cake. So many tips and tricks packed in this class!
